GI Alpha-Gal study

To investigate and evaluate the differences in Gastrointestinal (GI) allergic symptoms caused by ingestion of alpha-gal-containing and alpha-gal-free pork meat.

  • 18 years ~ 99 years
  • Male, Female, Gender Inclusive

What will be asked of you

As a participant, we will ask you to provide information about your GI symptoms during the study. Additionally, there will be two visits where food challenges will take place. On one day, you will be asked to consume alpha-gal-free pork, while on the other day, you will consume alpha-gal-containing pork. During these visits, we will collect blood and urine samples to further understand the effects of alpha-gal on your body.

Looking for Specific Volunteers

Able to participate:

  • 18 years or above
  • History of alpha-gal allergy AND GI symptoms like abdominal pain, vomiting, and diarrhea

Not eligible if:

  • Pregnancy
  • history of chronic GI conditions, including inflammatory bowel disease, celiac disease, chronic pancreatitis with continued symptoms
  • history of severe allergic reaction on mammalian meat ingestion
